breakfast of champions

I'm on a Quinoa kick. I've had it for 3 days in a row, in different ways and I don't see any sign of stopping!

This morning, I enjoyed the delicious, protein packed super food for breakfast. Here's what I made (I apologize; there are no pictures and I speak in handfuls, not in teaspoons - bear with me.)

Bring 1/3 cup dry Quinoa (this is one serving)
a couple sprinkles of cinnamon and
a handful of dried cranberries to boil in 2/3 cup water in a saucepan (dried apricots are great too!), then simmer until water is absorbed (about 10 - 15 mins).

With a fork, stir in a couple chunks of brown sugar to taste and a handful of toasted, slivered almonds. Top with a splash of soy milk.

Breakfast is served!
